  • Highball glass

Ingredients

  • 2 oz white rum
  • 1 oz limoncello Italian liqueur
  • 1 oz fresh lime juice
  • 0.5 oz simple syrup
  • 6-8 fresh mint leaves
  • club soda to top
  • crushed ice or clear ice cubes for serving
  • mint sprig for garnish
  • lime slice for garnish

Instructions

  • Drop mint leaves and simple syrup into the shaker.
  • Gently muddle to release mint oils.
  • Add white rum, limoncello, and lime juice.
  • Add ice and shake briefly, just to chill.
  • Strain into a highball glass packed with crushed ice or clear ice cubes.
  • Top with club soda and stir gently.
  • Garnish with a mint sprig and lime slice.

Notes

Use limoncello made from real lemons for the brightest flavor. Adjust syrup for more sweetness or lighten with extra club soda. Try flavored club sodas or sparkling lemonade for a twist. Crushed ice gives classic mojito vibes, but clear cubes work great too. For stronger mint, muddle in an extra leaf or two.
