  • Strainer (optional, for removing mint leaves)

Ingredients

For a 64 oz pitcher (serves 8):

  • 1 cup freshly squeezed lime juice about 8-10 limes
  • ¾ cup simple syrup equal parts sugar and water, heated until dissolved
  • ¼ cup fresh mint leaves plus extra for garnish
  • 6 cups cold sparkling water
  • 1 lime thinly sliced for garnish
  • Ice cubes

Optional: 1 cucumber, thinly sliced

Optional: 2 tablespoons honey (can replace simple syrup)

For a less sweet version, reduce the simple syrup to ½ cup. The recipe can be doubled for larger gatherings without any adjustments to the proportions.

Instructions

  • Prepare the limes. Wash all limes thoroughly. Roll each lime firmly on the countertop to help release more juice before cutting.
  • Make the juice base. Cut the limes in half and squeeze to extract the juice. Strain if you prefer pulp-free juice.
  • Add sweetener. Pour the lime juice into your pitcher, then add the simple syrup and stir well.
  • Add mint. Place mint leaves in the pitcher and gently muddle to release the oils without tearing the leaves.
  • Chill the base. Refrigerate this mixture for at least 30 minutes to let the flavors blend.
  • Finish the drink. Just before serving, add the sparkling water and stir gently.
  • Serve. Fill glasses with ice, pour in the limeade, and garnish with lime slices and fresh mint leaves.

Notes

This mocktail keeps well in the refrigerator for up to 24 hours, though it’s best to add the sparkling water just before serving to maintain carbonation.
For a different flavor, try adding a handful of fresh berries like strawberries or raspberries. They add color and a sweet-tart flavor.
Children especially enjoy this drink with a sugar-rimmed glass. Simply rub a lime wedge around the rim of each glass and dip in sugar.
For an extra cooling effect on hot days, freeze some of the limeade in ice cube trays and use these instead of regular ice cubes to prevent dilution as they melt.
