Ingredients

  • 1 medium lime cut into quarters (plus extra slices for garnish)
  • 8-10 fresh mint leaves
  • 1 tablespoon simple syrup or honey
  • 4-6 ounces high-quality ginger beer
  • Ice cubes
  • Optional: 1-2 thin slices of fresh ginger
  • Optional garnish: mint sprig

The quality of ginger beer makes a big difference in this recipe. Look for brands with real ginger and not just ginger flavoring.

Instructions

  • Prepare the glass: Fill a highball glass with ice cubes.
  • Muddle the lime: Place lime quarters and mint leaves in the bottom of the glass. Gently muddle to release the lime juice and mint oils without shredding the mint.
  • Add sweetener: Pour the simple syrup or honey over the muddled ingredients.
  • Add ginger beer: Slowly pour the ginger beer into the glass.
  • Mix gently: Use a bar spoon to stir the ingredients together carefully, bringing some of the muddled lime and mint from the bottom of the glass.
  • Garnish: Add a slice of lime and a sprig of mint to the rim of the glass.
  • Serve immediately while the drink is cold and the ginger beer is still fizzy.

Notes

This mocktail can be customized in several ways.
For a spicier version, add a few slices of fresh ginger when muddling. For a sweeter drink, increase the simple syrup to 2 tablespoons.
The recipe can be easily scaled up to make a pitcher for parties. Simply multiply the ingredients by the number of servings needed. However, add the ginger beer just before serving to maintain carbonation.
For a more intense lime flavor, add 1/2 teaspoon of lime zest to the muddling step.
Kids generally enjoy this mocktail too, though you might want to reduce the ginger beer and add a splash of lemonade to make it less spicy.
