Ingredients

  • 4 cups cubed seedless watermelon
  • 1/2 cup fresh lemon juice about 3-4 lemons
  • 2 tablespoons honey or simple syrup
  • 1 cup cold sparkling water
  • 1 cup ice cubes
  • Fresh mint leaves 8-10 leaves, plus extra for garnish
  • Lemon slices for garnish
  • Watermelon wedges for garnish

Optional additions:

  • 1/4 teaspoon sea salt enhances sweetness
  • 2 tablespoons fresh lime juice
  • 1 tablespoon ginger juice for a spicy kick

Choose ripe, sweet watermelon for the best flavor. Organic lemons are recommended since you'll be using the zest as well as the juice.

Instructions

  • Cut the watermelon into 1-inch cubes and place in the blender.
  • Blend until smooth, about 30-45 seconds.
  • Pour the watermelon puree through a fine mesh strainer into a pitcher to remove pulp and seeds.
  • Add fresh lemon juice and honey to the strained watermelon juice. Stir until honey dissolves completely.
  • Tear mint leaves and add to the mixture, gently pressing with a spoon to release their flavor.
  • Refrigerate the mixture for at least 30 minutes to chill and allow flavors to blend.
  • When ready to serve, fill glasses halfway with ice cubes.
  • Pour the watermelon-lemon mixture over ice, filling glasses about 3/4 full.
  • Top each glass with sparkling water and stir gently.
  • Garnish with fresh mint leaves, lemon slices, and small watermelon wedges on the rim of each glass.

Notes

This mocktail can be prepared up to 24 hours in advance. Keep the base mixture refrigerated and add sparkling water just before serving to maintain fizz.
For a frozen version, freeze the watermelon cubes before blending. This creates a slushy texture without diluting the flavors with extra ice.
The recipe makes approximately 4 servings (8 oz each). Double or triple ingredients for larger gatherings.
If preparing for children, you might want to increase the honey to 3 tablespoons for a sweeter taste. Adults might enjoy a more tart version with additional lemon juice.
For special occasions, rim glasses with sugar or a mixture of sugar and lemon zest for an extra touch of sweetness and presentation.
