  • Hawthorne strainer
  • Fine-mesh strainer
  • Jigger or measuring tool
  • Citrus juicer
  • Rocks glass
  • Small pot (for simple syrup)

Ingredients

  • 2 oz vodka
  • 1 oz fresh lemon juice
  • 3/4 oz thyme simple syrup
  • 1 egg white optional
  • Ice cubes
  • Fresh thyme sprigs for garnish

For thyme simple syrup:

  • 1 cup water
  • 1 cup granulated sugar
  • 8-10 fresh thyme sprigs

Instructions

  • Make the thyme simple syrup: Combine water and sugar in a small pot. Heat until sugar dissolves. Add thyme sprigs and let steep for 10 minutes. Strain and cool.
  • Add vodka, lemon juice, thyme simple syrup, and egg white (if using) to a cocktail shaker.
  • If using egg white, shake without ice first for 10 seconds (dry shake).
  • Add ice to the shaker and shake again for 15 seconds.
  • Double strain into a rocks glass filled with fresh ice.
  • Garnish with a fresh thyme sprig.

Notes

The drink can be made without egg white for a lighter texture. The thyme simple syrup stays fresh in the fridge for up to 2 weeks.
Fresh lemon juice works best - avoid bottled alternatives.
The cocktail can be served up in a coupe glass instead of on the rocks.
For a non-alcoholic version, replace vodka with cold water or club soda.
