Ingredients

  • 2 oz gin London Dry works best
  • 1 oz fresh lemon juice
  • ¾ oz lavender simple syrup
  • Soda water
  • Ice cubes
  • Lemon wheel and dried lavender sprig for garnish

For lavender simple syrup:

  • 1 cup water
  • 1 cup granulated sugar
  • 2 tablespoons dried culinary lavender

Instructions

  • Make lavender simple syrup: Combine water and sugar in a small saucepan. Bring it up to a simmer, stirring until the sugar dissolves. Toss in the dried lavender, take it off the heat, cover, and let it steep for about 15 minutes. Strain out the lavender and let the syrup cool completely.
  • Prepare the glass: Fill a highball glass with ice cubes. Nothing fancy, just plenty of ice.
  • Mix the cocktail: Add gin, fresh lemon juice, and lavender syrup to a cocktail shaker with ice. Shake it hard for about 15 seconds, until it's nice and cold.
  • Strain and finish: Strain everything into your prepared glass. Top with soda water—2 to 3 ounces is usually right, but you can eyeball it if you like.
  • Garnish: Add a lemon wheel and a little sprig of dried lavender. It looks great and smells even better.

Notes

There are a few ways to tweak this. For a non-alcoholic take, swap the gin for an alcohol-free alternative or just add more soda water and maybe a splash of tonic syrup.
The lavender syrup keeps well in the fridge—up to two weeks if you store it airtight. You might want to make extra; it's handy for more than just cocktails.
If you want a stronger lavender kick, let the syrup steep a bit longer. Prefer it subtle? Cut back on the steeping time or use a little less lavender.
Just be careful not to overdo it. Too much lavender and the drink can go from floral to soapy pretty quickly. The recipe as written strikes a nice balance, in my opinion.
