  • Tall glasses

Ingredients

For 2 servings:

  • 4 oz fresh lemon juice about 2-3 lemons
  • 2 oz lavender simple syrup
  • 8 oz club soda
  • Ice cubes
  • Lavender sprigs and lemon slices for garnish

To make lavender simple syrup:

  • 1/2 cup water
  • 1/2 cup sugar
  • 1 tablespoon dried lavender buds

Instructions

Make the lavender simple syrup:

  • Mix water, sugar, and lavender in a small pot.
  • Bring to a boil, then simmer for 5 minutes.
  • Remove from heat and let cool.
  • Strain out lavender buds.
  • Fill glasses with ice.

In a shaker, combine:

  • Lemon juice
  • Lavender simple syrup
  • A handful of ice
  • Shake well for 10-15 seconds.
  • Strain into ice-filled glasses.
  • Top with club soda.
  • Garnish with lavender sprigs and lemon slices.

Notes

You can make the lavender syrup ahead of time. It keeps in the fridge for up to 2 weeks.
For a stronger lavender flavor, let the syrup steep longer before straining.
If you prefer a sweeter drink, add more syrup. For less sweetness, use less syrup or add more lemon juice.
Try using Meyer lemons when in season for a unique flavor.
For a fun twist, freeze edible flowers in your ice cubes.
