Ingredients

  • 1 oz fresh lemon juice
  • 1 oz ginger simple syrup
  • 4 oz prosecco or champagne
  • Fresh ginger root
  • Ice cubes
  • Candied ginger for garnish
  • Lemon twist for garnish

For ginger simple syrup:

  • 1 cup water
  • 1 cup granulated sugar
  • 1/2 cup fresh ginger peeled and sliced

Instructions

  • Make the ginger simple syrup: Combine water, sugar, and sliced ginger in a small pot. Bring to a boil, then reduce heat and simmer for 10 minutes. Strain and cool completely.
  • Fill the cocktail shaker with ice. Add lemon juice and ginger simple syrup.
  • Shake vigorously for 15-20 seconds until well chilled.
  • Strain the mixture into a champagne flute.
  • Top with prosecco or champagne, pouring slowly to preserve the bubbles.
  • Garnish with a piece of candied ginger and lemon twist.

Notes

Store extra ginger simple syrup in an airtight container in the refrigerator for up to 2 weeks.
The cocktail can be made alcohol-free by substituting sparkling water for the prosecco.
For extra ginger flavor, grate fresh ginger root directly into the shaker before mixing.
Chill the champagne flutes before serving to keep the drink cold longer.
