  • Large pitcher (to mix the mocktail)

  • Ice cube tray
  • Citrus juicer (for fresh lemon juice, optional)

Ingredients

  • 4 cups seedless watermelon cubed
  • 1 cup cold water
  • ¾ cup sugar for syrup
  • 2 tablespoons dried culinary lavender or 4 fresh sprigs
  • ½ cup fresh lemon juice
  • 2 cups sparkling water chilled
  • Ice cubes
  • Lemon slices or watermelon wedges for garnish

Instructions

  • Add cubed watermelon to blender; blend until smooth.
  • Strain the mixture through a mesh strainer into a pitcher to remove pulp.
  • In a small saucepan, combine water, sugar, and lavender; bring to a simmer and stir until sugar dissolves (about 3 minutes).
  • Remove syrup from heat and let steep for 10 minutes. Strain out lavender and let the syrup cool.
  • Add cooled syrup and lemon juice to the pitcher with watermelon juice.
  • Stir well, then refrigerate until cold.
  • Just before serving, add ice and sparkling water.
  • Stir gently; pour into glasses and garnish with lemon slices or watermelon wedges.

Notes

I use only culinary lavender, not ornamental varieties, to make sure the drink is safe and tastes right.
If I want a less sweet drink, I reduce the sugar or skip the sweetener and add more sparkling water. Leftover syrup keeps in the fridge for up to one week, so I can make more mocktails later.
For a stronger floral flavor, I let the lavender syrup steep longer. If I’m serving kids, I adjust lemon juice to taste so it’s never too tart.
