Ingredients
4cupsseedless watermeloncubed
1cupcold water
¾cupsugarfor syrup
2tablespoonsdried culinary lavender or 4 fresh sprigs
½cupfresh lemon juice
2cupssparkling waterchilled
Ice cubes
Lemon slices or watermelon wedgesfor garnish
Instructions
Add cubed watermelon to blender; blend until smooth.
Strain the mixture through a mesh strainer into a pitcher to remove pulp.
In a small saucepan, combine water, sugar, and lavender; bring to a simmer and stir until sugar dissolves (about 3 minutes).
Remove syrup from heat and let steep for 10 minutes. Strain out lavender and let the syrup cool.
Add cooled syrup and lemon juice to the pitcher with watermelon juice.
Stir well, then refrigerate until cold.
Just before serving, add ice and sparkling water.
Stir gently; pour into glasses and garnish with lemon slices or watermelon wedges.
Notes
I use only culinary lavender, not ornamental varieties, to make sure the drink is safe and tastes right.If I want a less sweet drink, I reduce the sugar or skip the sweetener and add more sparkling water.
