Ingredients

  • 4 cups fresh watermelon chunks seeds removed
  • 1/4 cup fresh lime juice about 2-3 limes
  • 2 tablespoons dried culinary lavender
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 cup sparkling water or club soda
  • Ice cubes
  • Fresh mint leaves for garnish
  • Lime wedges for garnish

The quality of watermelon matters greatly in this recipe. Choose a ripe, sweet watermelon for the best flavor.

Instructions

  • Make the lavender syrup: Combine sugar, water, and dried lavender in a small saucepan. Bring to a simmer over medium heat, stirring until sugar dissolves. Remove from heat and let steep for 15 minutes. Strain and cool completely.
  • Prepare the watermelon puree: Add watermelon chunks to a blender and blend until smooth. Strain through a fine mesh strainer to remove pulp.
  • Mix the base: In a cocktail shaker, combine 1 cup of watermelon juice, 2 tablespoons of lavender syrup, and lime juice. Shake well with ice.
  • Assemble the mocktail: Fill glasses with ice. Pour the watermelon-lavender mixture into each glass, filling about 3/4 full.
  • Finish the drink: Top each glass with sparkling water. Stir gently to combine. Garnish with mint leaves and lime wedges.

Notes

The lavender syrup can be made up to a week in advance and stored in the refrigerator. This recipe makes about 4 servings, but can easily be doubled for a party.
For a less sweet version, reduce the amount of lavender syrup. The mocktail can be made kid-friendly by using less lavender syrup and adding more sparkling water.
Try freezing some watermelon cubes to use instead of ice for a more intense flavor that won’t dilute as it melts. For special occasions, rim the glasses with sugar mixed with a small amount of dried lavender.
