Ingredients

For Lavender Syrup:

  • 1/2 cup water
  • 1/2 cup sugar
  • 2 tablespoons dried lavender buds

For Bellini:

  • 3 ripe peaches pitted and sliced
  • 1/4 cup lavender syrup
  • 1 bottle prosecco 750ml, chilled
  • Fresh lavender sprigs for garnish

Instructions

  • First, make the lavender syrup. Mix water and sugar in a small saucepan, then heat until the sugar dissolves. Add lavender buds and simmer for 5 minutes. Strain and cool.
  • Next, blend peaches until smooth, then strain through a fine-mesh strainer to remove pulp.
  • Add 2 tablespoons of peach puree to each champagne flute.
  • After that, pour 1 tablespoon of lavender syrup into each glass.
  • Fill the glasses with prosecco, and stir gently with a cocktail spoon.
  • Finally, garnish with fresh lavender sprigs.

Notes

The lavender syrup stays fresh in the fridge for up to 2 weeks.
Make ahead tip: Prepare the peach puree up to 24 hours in advance.
For a non-alcoholic version, replace prosecco with sparkling water.
The drink works best with ripe, yellow peaches. White peaches can be too mild.
Keep prosecco and glasses chilled for the best results.
