Ingredients

  • 1 tablespoon dried culinary lavender buds
  • 1 cup water for syrup
  • 1 cup granulated sugar
  • 3/4 cup fresh lemon juice from about 4 lemons
  • 2 cups cold water
  • 1 cup club soda or sparkling water chilled
  • Ice cubes as needed
  • Lemon slices for garnish
  • Lavender sprigs for garnish (optional)

Instructions

  • Combine 1 cup water and 1 cup sugar in a small saucepan and bring to a simmer, stirring until the sugar dissolves.
  • Add 1 tablespoon dried lavender buds to the pan, remove from heat, and let steep for 20 minutes.
  • Strain the syrup through a fine mesh strainer or cheesecloth to remove the lavender buds. Let the lavender syrup cool completely.
  • In a large pitcher, mix the fresh lemon juice, 2 cups cold water, and all of the cooled lavender syrup.
  • Fill glasses with ice cubes. Pour the lavender lemonade mixture into each glass, filling about three-quarters full.
  • Top off each glass with chilled club soda or sparkling water.
  • Stir gently, then garnish with lemon slices and, if desired, a sprig of lavender.

Notes

I always check that the lavender is labeled for culinary use because not all lavender is safe for eating or drinking.
If I want a stronger lavender flavor, I steep the buds a few minutes longer, but not too much since the taste can get quite strong.
For a sweeter mocktail, I can add extra syrup or use less lemon juice. I chill all the liquids before mixing, so the ice doesn’t melt as fast and water down the drink.
If I serve this at a party, I garnish with fresh lemon slices and a little sprig of lavender for a pretty touch.
This mocktail is alcohol-free, but I remind guests with allergies to check ingredients like lavender. The club soda gives the fizz, but sparkling mineral water works too if that's what I've got on hand.
