Ingredients

  • 2 cups water
  • 1/2 cup fresh or dried culinary lavender
  • 1 cup sugar
  • 1 cup fresh lemon juice about 6-8 lemons
  • 6 oz premium vodka
  • Club soda
  • Ice cubes
  • Fresh lavender sprigs for garnish
  • Lemon wheels for garnish

Instructions

  • Make the lavender simple syrup first.
  • Combine water and sugar in a saucepan over medium heat. Stir until sugar dissolves.
  • Add lavender to the syrup. Remove from heat and let steep for 30 minutes.
  • Strain the syrup through a fine mesh strainer. Let cool completely.
  • Fill a pitcher with 1 cup lavender syrup, lemon juice, and vodka. Stir well.
  • Pour the mixture into highball glasses filled with ice. Top with club soda.
  • Garnish each glass with a lavender sprig and lemon wheel.

Notes

Store extra lavender syrup in an airtight container in the fridge for up to 2 weeks.
The drink can be made non-alcoholic by skipping the vodka.
Fresh lavender works best, but dried culinary lavender is a good substitute.
This recipe serves 4-6 people and can be doubled for larger groups.
Pre-mix the lavender syrup and lemon juice ahead of time for faster service.
