Equipment

  • Large pitcher or mixing glass
  • Measuring cups and spoons
  • Cocktail spoon or long-handled spoon
  • Fine-mesh strainer
  • Ice cube tray
  • Champagne flutes or tall glasses
  • Small saucepan (for syrup)

Ingredients

  • 2 cups water
  • 1/2 cup dried culinary lavender
  • 1/2 cup honey or sugar
  • 1 cup fresh lemon juice about 6-8 lemons
  • 4 cups sparkling water
  • Ice cubes
  • Fresh lavender sprigs for garnish
  • Lemon wheels for garnish

Instructions

  • First, make the lavender syrup. Add water, dried lavender, and honey to a saucepan. Heat over medium heat until it starts to simmer.
  • Remove from heat and let steep for 15 minutes. Strain through a fine mesh strainer and let cool completely.
  • Fill glasses with ice cubes.
  • Then, pour 2 tablespoons of lavender syrup and 2 tablespoons of lemon juice into each glass.
  • Top each glass with sparkling water and stir gently with a spoon.
  • The ratio should be about 1 part syrup, 1 part lemon juice, and 4 parts sparkling water.
  • Finally, garnish with a fresh lavender sprig and lemon wheel.

Notes

The lavender syrup can be made ahead and stored in the fridge for up to 2 weeks.
For a stronger lavender flavor, steep the syrup longer. For a milder taste, reduce steeping time to 10 minutes.
Make sure to use culinary lavender, not decorative or fragrance varieties.
To make this drink sweeter, add more lavender syrup. For a tarter taste, increase the lemon juice.
