Ingredients

  • 2 cups water
  • 1/2 cup dried culinary lavender
  • 1 cup granulated sugar
  • 1 cup freshly squeezed lemon juice about 6-8 lemons
  • 4 cups sparkling water or club soda
  • 1 lemon thinly sliced for garnish
  • Fresh lavender sprigs for garnish optional
  • Ice cubes

Instructions

  • Make lavender syrup: Combine water and sugar in a saucepan over medium heat. Stir until sugar dissolves completely. Add dried lavender, bring to a simmer, then remove from heat. Let steep for 30 minutes.
  • Strain the syrup through a fine mesh strainer into a container. Discard the lavender buds. Cool the syrup completely in the refrigerator (about 1 hour).
  • Mix the base: In a large pitcher, combine the cooled lavender syrup and freshly squeezed lemon juice. Stir well to mix.
  • Prepare for serving: Fill glasses with ice cubes. Pour the lavender-lemon mixture until glasses are 1/2 full.
  • Top with sparkling water to fill each glass. Gently stir to combine.
  • Garnish each glass with a lemon slice and a sprig of fresh lavender if desired.

Notes

The lavender syrup can be made up to one week in advance and stored in an airtight container in the refrigerator. This makes party preparation much easier.
For a stronger lavender flavor, increase steeping time to 45 minutes. For a milder taste, reduce to 15-20 minutes.
This recipe makes approximately 6-8 servings depending on glass size. Double the recipe for larger gatherings.
Try freezing lavender syrup in ice cube trays for a beautiful addition that won't dilute your drink as it melts.
For a special touch, rim glasses with sugar mixed with dried lavender before serving.
