Ingredients

For Lavender Simple Syrup:

  • 1 cup water
  • 1 cup granulated sugar
  • 2 tablespoons dried culinary lavender

  • 1 oz 2 tablespoons lavender simple syrup
  • 4 oz ½ cup freshly squeezed orange juice
  • 1 oz 2 tablespoons fresh lemon juice
  • 2 oz ¼ cup soda water
  • Ice cubes
  • Orange slices and lavender sprigs for garnish

Fresh ingredients make a big difference in this recipe. The best results come from using freshly squeezed citrus juices rather than store-bought versions.

Instructions

Make the lavender syrup first:

  • Combine water and sugar in a saucepan over medium heat.
  • Stir until the sugar dissolves completely.
  • Add dried lavender, bring to a simmer, then remove from heat.
  • Let it steep for 15-20 minutes.
  • Strain and cool completely (can be made up to 1 week ahead).

Prepare the mocktail:

  • Fill a cocktail shaker halfway with ice.
  • Add lavender syrup, orange juice, and lemon juice.
  • Shake vigorously for 15-20 seconds until well chilled.
  • Strain into ice-filled glasses.
  • Top with soda water and gently stir.

Garnish and serve:

  • Add an orange slice to the rim of each glass.
  • Float a small sprig of fresh lavender on top.
  • Serve immediately.

Notes

This recipe can be easily adjusted to personal taste preferences. For a less sweet version, reduce the amount of lavender syrup. The syrup keeps well in the refrigerator for up to two weeks in an airtight container.
For a party, prepare the juice and syrup mixture ahead of time, then add ice and soda water when guests arrive. A stronger lavender flavor can be achieved by steeping the buds longer in the syrup.
