  • Muddler
  • Fine-mesh strainer
  • Champagne flutes or wine glasses
  • Measuring jigger

Ingredients

For two servings, gather:

  • 4 oz Prosecco
  • 2 oz vodka
  • 1 oz fresh lemon juice
  • 1 oz lavender honey syrup
  • 4-6 fresh lavender sprigs
  • Ice cubes
  • Club soda
  • Lemon slices and extra lavender sprigs for garnish

The lavender honey syrup can be made by heating equal parts honey and water with dried lavender buds. Strain and cool before using.

Instructions

  • Put 2-3 lavender sprigs in the shaker and muddle gently.
  • Add vodka, lemon juice, and lavender honey syrup.
  • Fill the shaker with ice and shake for 10-15 seconds.
  • Strain the mixture into two glasses filled with ice.
  • Top each glass with 2 oz of Prosecco.
  • Add a splash of club soda.
  • Stir gently to mix.
  • Garnish with a lemon slice and fresh lavender sprig.

Serve right away to enjoy the bubbles and fresh flavors.

    Notes

    This recipe can be adjusted to taste. For a stronger lavender flavor, steep the syrup longer. If you prefer a sweeter drink, add more honey syrup.
    Make sure to use food-grade lavender. Some garden varieties may have been treated with chemicals not safe for eating.
    For a non-alcoholic version, replace the Prosecco and vodka with sparkling water or lemonade.
    The lavender honey syrup can be made ahead and stored in the fridge for up to two weeks.
