Equipment

  • 1 teakettle or saucepan (for steeping tea)
  • 1 mesh strainer (to catch tea leaves or lavender bits)
  • 1 small bowl (for blooming the lavender)
  • 1 measuring cup (for accurate amounts)
  • 1 long spoon or cocktail stirrer (for mixing)
  • 2 Tall glasses for serving
  • 1 small saucepan (for syrup, if making homemade lavender syrup)
  • 1 fine mesh sieve or cheesecloth (optional, for straining syrup)
  • 1 ice cube tray (for serving chilled)

Ingredients

  • 2 green tea bags or 2 teaspoons loose green tea
  • 2 cups boiling water
  • 1 tablespoon dried culinary lavender or 2 tablespoons lavender syrup
  • 1 tablespoon honey or simple syrup adjust for sweetness
  • 1/2 cup club soda or sparkling water
  • Ice cubes as needed
  • Lemon slices and extra lavender sprigs optional, for garnish

Instructions

  • Boil 2 cups of water and pour over green tea bags or loose leaf tea in a heatproof bowl.
  • Add dried lavender or lavender syrup to the hot tea. If you’re using dried lavender, steep for 5 minutes, then strain well.
  • Stir in honey or simple syrup while the tea is still warm.
  • Let the tea cool to room temperature, or pop it in the fridge to chill faster.
  • Fill two glasses with ice cubes.
  • Pour the cooled lavender green tea over the ice, filling each glass about three-quarters full.
  • Top with club soda or sparkling water, and give it a gentle stir.
  • Garnish with lemon slices or a sprig of lavender if you’re feeling extra.

Notes

I taste as I go, especially since lavender and tea can be strong or weak depending on the batch. Over-steeped lavender can get bitter, so I watch the clock. Milder green tea keeps the flavors balanced.
Sometimes, I use store-bought lavender syrup to save time. But making it at home with lavender, water, and sugar is easy too. If I’m making this for friends, I’ll just double everything and use a big pitcher. A splash of lemon juice or some fresh berries is fun if I want to mix things up. Flavored sparkling waters—lemon or berry—can totally change the vibe, but it’s never complicated.
