Lavender Grapefruit Soda Mocktail Recipe

Equipment

  • Citrus juicer (manual or electric)
  • Small saucepan
  • Fine-mesh strainer
  • Measuring spoons
  • Measuring cup
  • Mixing spoon
  • Ice cube tray
  • Tall glass or mason jar
  • Small whisk or fork

Ingredients

  • 1/4 cup fresh grapefruit juice about 1/2 grapefruit
  • 1/2 cup soda water chilled
  • 1 tablespoon dried culinary lavender
  • 1/4 cup granulated sugar
  • 1/4 cup water
  • Ice cubes
  • Grapefruit slices for garnish
  • Fresh lavender sprig for garnish, optional

Instructions

  • Add sugar, water, and dried lavender to a small saucepan.
  • Heat over low, stir until sugar dissolves. Simmer for 3-4 minutes.
  • Remove from heat. Let cool for 10 minutes, then strain out lavender.
  • Juice the grapefruit until you have 1/4 cup.
  • Fill a tall glass with ice cubes.
  • Pour in fresh grapefruit juice.
  • Add 2 tablespoons of the lavender syrup (or to taste).
  • Top with soda water and stir gently with a spoon.
  • Garnish with a grapefruit slice and a lavender sprig if you like.

Notes

I always use dried culinary lavender, not the ornamental kind, to make sure it’s safe. I strain the syrup well to keep my drink smooth.
If the mocktail is too sweet, I use less syrup or more soda water. For a stronger floral note, I let the syrup steep a bit longer before straining.
Fresh grapefruit juice tastes best, but bottled juice can work in a pinch. The mocktail looks way more appealing with a slice of grapefruit on the rim or a bit of lavender on top.
For less sugar, I sometimes cut the syrup amount in half and add extra soda. I keep extra syrup in a jar in the fridge for up to a week, just in case I want to make another round.
