Equipment

  • Cocktail shaker
  • Bar spoon
  • Jigger
  • Fine-mesh strainer
  • Coupe or rocks glass
  • Citrus juicer
  • Small sieve

Ingredients

  • 2 oz gin high-quality
  • 0.75 oz lemon juice fresh
  • 0.5 oz lavender simple syrup or lavender syrup made with culinary lavender or extract
  • 0.25 oz simple syrup optional, to taste
  • 1 egg white or 1 oz aquafaba for foam
  • ice cubes
  • lavender sprig or lemon twist for garnish

Instructions

  • Add gin, lemon juice, lavender syrup, and egg white (or aquafaba) to a cocktail shaker.
  • Dry shake (no ice) for about 10 seconds to build foam.
  • Add ice and shake again until the shaker feels very cold.
  • Strain through a fine mesh strainer into a chilled coupe or rocks glass.
  • Garnish with a lavender sprig or lemon twist.

Notes

Use culinary lavender for a clean, non-soapy flavor. If using lavender extract, start with just a drop; it’s potent. Aquafaba gives plant-based foam if you prefer to skip egg white. Adjust sweetness by increasing or reducing the simple syrup. Chill the glass first for best texture.
