Equipment

  • Cocktail shaker or a big mason jar with a lid
  • Fine-mesh strainer
  • Muddler or just a wooden spoon
  • Jigger or measuring spoon
  • Highball or collins glass
  • Small knife and cutting board
  • Spoon: For stirring.
  • Ice cubes

Ingredients

  • 4-5 slices fresh cucumber
  • 1/2 oz lavender simple syrup*
  • 1 oz fresh lemon juice
  • 1/2 oz honey or agave syrup optional, for extra sweetness
  • 3 oz cold sparkling water
  • Ice cubes
  • Thin cucumber slices and sprigs of lavender for garnish

Instructions

  • Add cucumber slices to your shaker or jar.
  • Muddle well to get their juices and flavor out.
  • Pour in the lavender syrup, lemon juice, and sweetener if you’re using it.
  • Fill the shaker or jar halfway with ice.
  • Shake gently for about 15 seconds.
  • Strain into a tall glass filled with fresh ice.
  • Top with sparkling water and give it a gentle stir.
  • Garnish with extra cucumber slices and a sprig of lavender.

Notes

I tweak the syrup or sweetener depending on how sweet or floral I’m in the mood for. If I’m out of honey, agave syrup is an easy vegan swap.
Sometimes I let the syrup steep longer for a bigger lavender punch. A few mint leaves tossed in can make it extra cooling, too.
If I want to prep ahead, I’ll make the syrup up to a week early and keep it in the fridge. Chilled glasses help keep things icy cold.
I try not to over-muddle, though—otherwise, the cucumber can get a little bitter. Each part is simple, but together, it’s honestly pretty special and super refreshing.
