This refreshing gin cocktail blends floral lavender syrup with fresh lemon juice and club soda. It’s a light and elegant drink for spring and summer gatherings.
Make the lavender syrup: Heat water and sugar in a pot until the sugar dissolves. Add lavender buds and simmer for 5 minutes.
Strain and let cool.
Fill a cocktail shaker with ice. Add gin, lemon juice, and lavender syrup.
Shake hard for 10-12 seconds until the mixture is well-chilled.
Strain into a Collins glass filled with fresh ice.
Top with club soda. Stir gently with a bar spoon.
