Notes

I prefer using fresh-squeezed lemon juice for the best flavor. If you use bottled lemon juice, the drink may taste a bit different.
For a sparkling twist, I sometimes swap half of the water with club soda or sparkling water just before serving.
This adds a refreshing fizz. The lavender syrup can be prepared ahead of time and stored in the fridge for up to a week.
If you want the mocktail less sweet, reduce the amount of honey or sugar. To make a larger batch, double or triple the ingredient amounts and use a bigger pitcher.
Always strain the syrup well so the drink stays smooth.
