Ingredients

  • 1 cup fresh blackberries
  • 1 cup granulated sugar
  • 1 cup water
  • 1 tablespoon dried culinary lavender buds
  • 1/2 cup fresh lime juice about 4–5 limes
  • 3 cups cold water
  • Ice cubes
  • Extra blackberries and lime slices for garnish

Instructions

  • Combine blackberries, sugar, water, and lavender in a saucepan. Heat on medium and stir until sugar dissolves.
  • Simmer gently for about 5 minutes, mashing the berries to release juice.
  • Turn off heat and let the mixture steep for another 10 minutes.
  • Pour through a fine mesh strainer into a bowl or pitcher. Press to extract as much liquid as possible, then discard solids.
  • Add lime juice and cold water to the strained syrup. Stir until mixed.
  • Fill glasses with ice. Pour mocktail over ice and garnish with berries and lime slices.
  • Serve chilled.

Notes

If I can’t find dried lavender, I leave it out or use a lavender syrup instead. I usually adjust the sugar and lime juice to my own taste—less sugar if I want it tarter, or more lime for extra zing.
I sometimes make the blackberry-lavender syrup ahead and keep it in the fridge for a few days. For parties, I double the recipe.
For a bubbly version, I swap some cold water with club soda right before serving. Always use food-grade lavender since not all types are meant to be eaten.
