Notes
I always taste the lavender syrup before using it. Some are punchier than others, and I've had to dial it back a bit when it was too strong. Not in the mood for something sweet? I just use less syrup or add more lemon juice. If I want it extra floral, I'll toss in a touch more syrup or a bigger sprig of lavender. This cocktail really shines when it's fresh. Leftovers? Not so much—the bubbles disappear, and it gets kind of flat. I only mix up what I plan to serve. If I'm making these for a group, I'll prep everything except the Prosecco ahead of time, then add the bubbles right before serving. That way, everyone gets the fizz.
