Equipment

  • Cocktail shaker (for mixing the lavender syrup and lemon juice)
  • Measuring jigger: For accurate liquid measurements.
  • Fine mesh strainer (to strain out lavender or ice shards)
  • Bar spoon (helpful for stirring gently)
  • Champagne flutes or wine glasses (to serve the cocktail)
  • Small saucepan (if making homemade lavender syrup)
  • Citrus juicer: For fresh lemon juice.
  • Ice cube tray (to chill the drink)
  • Serving tray (optional, for presentation)

Ingredients

  • 3 oz Prosecco chilled; any dry brand works
  • 1 oz lemon juice freshly squeezed for best flavor
  • 1/2 oz lavender simple syrup homemade or store-bought
  • Ice cubes enough to fill the shaker partway
  • Lemon wheel or twist for garnish
  • Fresh lavender sprig optional, for decoration
  • Optional: extra sugar to rim the glass

Instructions

  • Add ice to the cocktail shaker.
  • Pour in the lemon juice and lavender syrup.
  • Shake well for about 10 seconds.
  • Strain into a chilled flute or wine glass.
  • Top the glass with Prosecco, pouring slowly to keep the bubbles.
  • Stir gently with a bar spoon.
  • Garnish with a lemon wheel or twist, plus a lavender sprig if using.

Notes

I always taste the lavender syrup before using it. Some are punchier than others, and I've had to dial it back a bit when it was too strong.
Not in the mood for something sweet? I just use less syrup or add more lemon juice. If I want it extra floral, I'll toss in a touch more syrup or a bigger sprig of lavender.
This cocktail really shines when it's fresh. Leftovers? Not so much—the bubbles disappear, and it gets kind of flat. I only mix up what I plan to serve.
If I'm making these for a group, I'll prep everything except the Prosecco ahead of time, then add the bubbles right before serving. That way, everyone gets the fizz.
