Kiwi Watermelon Breeze Mocktail Recipe

Ingredients

  • 4 cups cubed watermelon about half a medium watermelon
  • 3 ripe kiwis peeled and quartered
  • 1/4 cup fresh lime juice about 2-3 limes
  • 2 tablespoons honey or agave syrup
  • 10-12 fresh mint leaves plus extra for garnish
  • 1 cup sparkling water
  • Ice cubes
  • Watermelon wedges and kiwi slices for garnish

Optional additions:

  • 1/2 teaspoon grated ginger for extra zing
  • Splash of coconut water for tropical flavor
  • Lime wheels for garnish

Choose ripe, sweet watermelon for the best flavor. The fruit should feel heavy for its size and have a deep red interior.

Instructions

  • Prepare the fruit: Cut watermelon into 1-inch cubes. Peel kiwis and cut into quarters.
  • Make the fruit puree: Add watermelon, kiwis, lime juice, and honey to a blender. Blend until smooth, about 30-45 seconds.
  • Strain the mixture: Pour the blended mixture through a fine mesh strainer into a pitcher to remove seeds and pulp. Press gently with a spoon to extract all the juice.
  • Add the mint: Place mint leaves in the pitcher and muddle gently to release their flavor. Don't over-muddle as this can make the mint taste bitter.
  • Chill the mixture: Refrigerate for at least 30 minutes to allow flavors to blend.
  • Finish and serve: Just before serving, add sparkling water and stir gently. Fill glasses with ice, pour in the mocktail mixture, and garnish with fresh mint leaves, watermelon wedges, and kiwi slices.

Notes

This mocktail can be prepared up to 24 hours in advance (without the sparkling water). Keep the base mixture refrigerated and add sparkling water just before serving.
For a frozen version, freeze the blended fruit mixture in ice cube trays. Blend the frozen cubes with a splash of sparkling water for a slushy texture.
Kids love this drink, but you can make an adult version by adding 1 ounce of white rum or vodka per serving.
The recipe is naturally gluten-free and can be made vegan by substituting the honey with agave syrup or maple syrup.
