  • Cocktail glass

Ingredients

  • 2 ripe kiwis peeled and quartered
  • 6-8 fresh mint leaves
  • 2 oz vodka
  • 1 oz fresh lime juice
  • 1 oz simple syrup
  • Club soda
  • Ice cubes
  • Mint sprig and kiwi slice for garnish

Instructions

  • Add kiwi pieces and mint leaves to the cocktail shaker.
  • Using the muddler, press down and twist to crush the kiwis and release the mint oils.
  • Pour in vodka, lime juice, and simple syrup.
  • Fill the shaker with ice and shake for 15-20 seconds.
  • Double strain into an ice-filled glass to remove kiwi pulp.
  • Top with a splash of club soda and stir gently.
  • Garnish with a mint sprig and kiwi slice.

Notes

Store-bought simple syrup works well, but making it at home is easy. Mix equal parts sugar and water in a pot, heat until dissolved, then cool.
Fresh kiwis work best. Avoid using frozen kiwis as they become too mushy when thawed.
Make it non-alcoholic by replacing vodka with extra club soda.
This recipe serves one person. Double or triple the ingredients to make multiple servings.
