Ingredients

  • 2 ripe kiwis peeled and chopped
  • 1 oz 30ml fresh lime juice (about 1 medium lime)
  • 1 oz 30ml simple syrup
  • 4 fresh mint leaves plus extra for garnish
  • 8 oz 240ml soda water or sparkling water
  • Ice cubes
  • Lime wheels and kiwi slices for garnish
  • Optional: 1 tsp honey for added sweetness

Instructions

  • Peel and chop the kiwis into small pieces.
  • Add kiwi pieces, lime juice, simple syrup, and mint leaves to a cocktail shaker.
  • Muddle gently to release the kiwi juice and mint oils without making it too pulpy.
  • Add ice to the shaker, secure the lid, and shake vigorously for 15-20 seconds.
  • Fill two highball glasses with ice cubes.
  • Strain the mixture evenly into the glasses.
  • Top each glass with soda water (about 4 oz per glass).
  • Stir gently with a long spoon to combine.
  • Garnish with lime wheels, kiwi slices, and a sprig of mint.
  • Serve immediately while the drink is cold and the bubbles are still lively.

The colors will start to change after about 30 minutes as the kiwi oxidizes.

    Notes

    This mocktail can be adapted in several ways. For a sweeter version, add an extra teaspoon of simple syrup or honey.
    For a tropical twist, replace half the kiwi with pineapple chunks.
