Ingredients

  • 2 ripe kiwis peeled and quartered
  • 1 lime cut into wedges
  • 2 oz vodka
  • 1 oz simple syrup
  • Ice cubes
  • Club soda
  • Kiwi slices and lime wedges for garnish

Fresh kiwis and limes are best. For a non-alcoholic version, replace vodka with extra club soda. Simple syrup can be made by mixing equal parts sugar and hot water until dissolved.

Instructions

  • Put kiwi pieces and 2 lime wedges in the shaker. Muddle gently to release juices.
  • Add vodka, simple syrup, and ice. Shake well for 10-15 seconds.
  • Fill glasses with ice. Strain the mixture into glasses.
  • Top with a splash of club soda. Stir lightly.
  • Garnish with kiwi slices and lime wedges.

You can adjust the sweetness by adding more or less simple syrup to taste. For a smoother drink, double strain through a fine mesh strainer.

    Notes

    This recipe makes 2 servings. It can be easily doubled or tripled for a crowd.
    The drink is best enjoyed fresh, but the kiwi-lime mix (without club soda) can be made ahead and stored in the fridge for up to 24 hours.
    For a frozen version, blend all ingredients with 1 cup of ice until smooth. Skip the club soda for a slushy texture.
    Try different spirits like rum or tequila for tasty variations. Mint leaves make a nice addition too.
