Ingredients

  • 6 ripe kiwis peeled and quartered
  • 2- inch piece fresh ginger peeled and thinly sliced
  • 1/4 cup fresh lime juice about 2-3 limes
  • 1/3 cup honey or agave syrup
  • 4 cups cold sparkling water
  • 1 cup ice cubes
  • Fresh mint leaves for garnish
  • Lime slices for garnish

Select kiwis that yield slightly to gentle pressure - they should be ripe but not mushy.

Instructions

  • Prepare the kiwi puree: Add peeled kiwis to the blender and process until smooth. Pass the puree through a fine mesh strainer to remove seeds if desired.
  • Make the ginger syrup: Combine 1 cup water with sliced ginger in a small saucepan. Bring to a simmer over medium heat, then add honey and stir until dissolved. Remove from heat and let steep for 15 minutes.
  • Strain the ginger syrup through a fine mesh strainer and discard the ginger pieces. Allow the syrup to cool completely.
  • Mix the punch: In a large pitcher, combine the kiwi puree, ginger syrup, and lime juice. Stir well to blend the flavors.
  • Add sparkling water just before serving and stir gently to maintain carbonation. Add ice to the pitcher or individual glasses.
  • Garnish with fresh mint leaves and lime slices before serving.

Notes

This mocktail can be prepared partially in advance. Make the kiwi puree and ginger syrup up to 24 hours ahead and store in the refrigerator. Only add the sparkling water right before serving to maintain the fizz.
For a sweeter version, increase honey to 1/2 cup. For a more tart flavor, add an extra tablespoon of lime juice.
Children especially enjoy this drink when served with colorful paper straws or fancy drink umbrellas. For parties, consider freezing some kiwi slices to use as decorative ice cubes.
The recipe makes approximately 6 servings but can easily be doubled for larger gatherings.
