Ingredients

  • 2 ripe kiwis peeled
  • 1/2 medium cucumber peeled
  • 1 cup cold water
  • 2 tablespoons fresh lime juice
  • 2 tablespoons honey or agave nectar
  • 4-5 fresh mint leaves
  • Club soda
  • Ice cubes
  • Cucumber slices and kiwi wheels for garnish

Instructions

  • Cut the kiwis and cucumber into small chunks.
  • Place kiwi and cucumber pieces in the blender with water, lime juice, and honey.
  • Blend until smooth, about 30 seconds.
  • Strain the mixture through a fine-mesh strainer into a pitcher.
  • Fill glasses with ice cubes and add 3-4 mint leaves to each glass.
  • Pour the strained mixture into glasses, filling them 2/3 full.
  • Top with club soda and stir gently.
  • Garnish with cucumber slices and kiwi wheels.

Notes

Store any leftover mixture in the refrigerator for up to 24 hours.
The drink tastes best when served immediately after mixing with club soda.
For extra sweetness, add more honey or agave nectar to taste.
Replace regular water with coconut water for a tropical twist.
Always use ripe kiwis for the best flavor.
