Ingredients

  • 2 ripe kiwis peeled and chopped
  • 1/2 medium cucumber peeled and chopped (about 1 cup)
  • 2 tablespoons fresh lime juice
  • 2 tablespoons honey or agave syrup
  • 1/4 cup fresh mint leaves plus extra for garnish
  • 2 cups cold sparkling water
  • Ice cubes
  • Cucumber slices and kiwi slices for garnish

Optional additions:

  • 1 teaspoon grated ginger for extra zing
  • A splash of coconut water for tropical flavor

All ingredients should be fresh for the best flavor. The sweetness can be adjusted based on how ripe your kiwis are.

Instructions

  • Prepare the fruit: Peel and chop the kiwis and cucumber into small pieces.
  • Make the base: Add the kiwi, cucumber, lime juice, and honey to a blender. Blend until smooth, about 30 seconds.
  • Strain the mixture: Pour the blended mixture through a fine mesh strainer into a pitcher to remove pulp and seeds. Press with a spoon to extract all the liquid.
  • Add the mint: Place mint leaves in the pitcher and muddle gently to release their flavor without tearing them.
  • Finish the mocktail: Add sparkling water to the pitcher and stir gently to combine. Taste and adjust sweetness if needed.
  • Serve: Fill glasses with ice, pour in the mocktail, and garnish with mint leaves, cucumber slices, and kiwi slices.

Let the mocktail chill for 30 minutes before serving for the best flavor balance.

    Notes

    This recipe makes about 4 servings and can be prepared up to 4 hours ahead. Store in the refrigerator, but add the sparkling water just before serving to maintain the fizz.
    For a stronger cucumber flavor, leave the peel on the cucumber when blending. The peel contains many nutrients but may change the color slightly.
    Kids especially enjoy this drink when served in fun glasses with colorful straws. For adult gatherings, it can be served in wine glasses for an elegant touch.
    The base mixture (before adding sparkling water) can be frozen in ice cube trays to make refreshing fruit cubes for plain water or lemonade.
