Ingredients

  • 2 ripe kiwis peeled and chopped
  • 1 cup coconut milk
  • 1/2 cup coconut water
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or agave syrup adjust to taste
  • 1/2 cup ice cubes
  • Fresh mint leaves for garnish
  • Kiwi slices for garnish
  • Toasted coconut flakes for rim, optional

For coconut rim (optional):

  • 2 tablespoons honey
  • 3 tablespoons toasted coconut flakes

The quality of ingredients matters. Choose kiwis that yield slightly to gentle pressure for optimal sweetness. Additionally, canned coconut milk provides a richer flavor than carton varieties.

Instructions

  • Prepare the glass: If using coconut rim, spread honey on a small plate. Place coconut flakes on another plate. Dip the rim of each glass in honey, then in coconut flakes.
  • Make kiwi puree: Add peeled and chopped kiwis to a blender. Blend until smooth, about 30 seconds.
  • Mix the mocktail: In a cocktail shaker, combine kiwi puree, coconut milk, coconut water, lime juice, and honey.
  • Shake it up: Add ice to the shaker and shake vigorously for 15-20 seconds until well-chilled.
  • Strain and serve: Pour the mixture through a fine mesh strainer into prepared glasses filled with ice.
  • Garnish: Add a slice of kiwi to the rim and a few mint leaves on top.

For best results, serve immediately while cold and fresh.

    Notes

    This recipe makes two 8-ounce servings. The mocktail can be prepared up to 2 hours ahead and stored in the refrigerator, but add ice only when ready to serve.
    For a smoother texture, strain the kiwi puree before adding to the cocktail shaker. This removes seeds that might affect the drinking experience.
    Make it boozy by adding 1.5 oz of white rum or vodka per serving. For a sweeter version, increase honey to 2 tablespoons.
    For a kid-friendly version, replace coconut water with lemon-lime soda.
