Instructions

  • Cut the honeydew melon into small cubes, removing all seeds and rind.
  • Place the melon cubes in a blender and process until smooth.
  • Pour the melon puree through a fine mesh strainer to remove pulp.
  • In a cocktail shaker or mixing glass, gently muddle the mint leaves to release their oils.
  • Add the strained melon puree, lime juice, and honey to the muddled mint.
  • Fill glasses with ice cubes and pour the melon mixture over the ice.
  • Top each glass with soda water and stir gently.
