This floral, bright cocktail combines fresh lemon juice, soothing lavender, sweet honey, and optional vodka or gin. Crisp, light, and easy to make for spring and summer sipping.
1.5ozfreshly squeezed lemon juiceabout 1 large lemon
1tbsphoneyto taste
0.25tspculinary lavenderor dried lavender buds
3ozwaterplus more to dilute
ice cubes
1.5ozvodka or ginoptional
lemon slices or wedgesfor garnish
fresh lavender sprigsoptional, for garnish
Instructions
Combine honey, 3 oz water, and lavender buds in a small saucepan. Warm gently until honey dissolves. Let steep for 10 minutes, then strain and cool.
Juice the lemon(s) until you have 1.5 oz fresh juice.
Fill a shaker with ice. Add lemon juice, honey lavender syrup, and vodka or gin if using.
Shake well until chilled. Strain into a glass filled with ice.
Top with more water or soda to taste.
Garnish with lemon slice and a fresh lavender sprig.
Notes
Use just a little lavender—too much can overpower the drink. Skip the spirits for a non-alcoholic lemonade. Store extra honey lavender syrup in the fridge for a week. Always use fresh lemon juice for the brightest flavor.
