  • Mesh strainer
  • Teapot or saucepan
  • Grater
  • Measuring spoons
  • Citrus juicer
  • Mixing glass or mug
  • Glass for serving
  • Spoon
  • Ice cube tray

Ingredients

  • 1 tablespoon raw honey
  • 2 teaspoons fresh grated ginger
  • 1 cup hot water
  • 1 tablespoon fresh lime juice
  • 1/2 cup ice
  • 1/2 cup seltzer or sparkling water
  • orange slice optional, for garnish
  • ginger ale optional, for more fizz
  • extra honey or grated ginger optional, to taste

Instructions

  • Grate the ginger. In a teapot or saucepan, combine ginger and hot water. Steep for 5–10 minutes.
  • Strain tea into mixing glass to remove ginger bits.
  • Add honey and stir until dissolved.
  • Add lime juice and mix well.
  • Fill serving glass with ice. Pour tea mixture over ice.
  • Top with seltzer or sparkling water (or ginger ale for extra fizz). Garnish with orange slice or grated ginger if desired. Serve cold.

Notes

Use raw honey for a deeper flavor. Taste as you go and adjust sweetness or spice. For a less intense ginger flavor, use less or steep for less time. Great for soothing and refreshing, hot or iced.
