Ingredients

  • 1 honey crisp apple cored and sliced
  • 1 tablespoon honey
  • 1/2 teaspoon ground cinnamon or cinnamon stick
  • 1/4 teaspoon fresh ginger grated
  • 1 tablespoon maple syrup optional, for more sweetness
  • 1/2 cup apple cider
  • 1 tablespoon lemon juice fresh
  • 1/2 cup ginger beer
  • 1/2 cup sparkling water
  • ice cubes
  • apple slices for garnish
  • cinnamon stick for garnish

Instructions

  • Slice honey crisp apple and reserve a couple of slices for garnish.
  • Add apple slices, honey, cinnamon, ginger, and maple syrup to a small saucepan with apple cider. Simmer on low for 10 minutes, stirring occasionally.
  • Strain mixture into a mixing glass to remove solids. Stir in lemon juice.
  • Fill serving glass with ice. Pour syrup mixture over ice.
  • Add ginger beer and sparkling water. Stir gently.
  • Top with reserved apple slices and a cinnamon stick for garnish.

Notes

Tweak sweetness with honey or maple syrup. Use fresh apples for best flavor. No ginger beer? Use extra sparkling water and add a little grated ginger. Leftover syrup keeps for 3 days in the fridge.
