Ingredients

  • 2 cups chai tea brewed strong
  • 1 cup apple cider
  • 0.5 cup pomegranate juice
  • 0.5 cup cranberry juice
  • 2 tbsp honey or simple syrup
  • 1 tbsp lemon juice or lime juice
  • 1 cinnamon stick
  • 2 star anise
  • Pinch nutmeg
  • 0.5 cup sparkling water or club soda
  • Optional: splash ginger beer for kick
  • Garnishes: pomegranate seeds, cranberries, orange slices, rosemary sprig, mint, or lemon slice

Instructions

  • Brew chai tea strong and pour into a saucepan. Add apple cider, pomegranate juice, cranberry juice, cinnamon, star anise, and nutmeg. Simmer on low for 5–7 minutes.
  • Strain out the spices. Stir in honey/simple syrup and lemon/lime juice. Chill or shake with ice.
  • Pour into glasses over ice. Top with sparkling water, club soda, or ginger beer. Garnish as desired.

Notes

Swap in black tea or kombucha for a twist. Sweeten to taste and serve warm or cold. Try peppermint or whipped cream as a garnish for even more holiday flavor.
