  • Small knife and cutting board
  • Strainer

Ingredients

  • 2 oz Pimms No.1
  • 1 oz white rum
  • 1 oz cranberry juice
  • 1 oz pomegranate juice
  • 0.5 oz lemon juice fresh
  • 0.5 oz simple syrup
  • club soda to top
  • 6-8 fresh mint leaves
  • ice cubes
  • fresh cranberries for garnish
  • mint sprig for garnish
  • lemon wedge optional garnish

Instructions

  • Drop mint leaves into a highball glass and gently muddle to release oils.
  • Add Pimms, rum, cranberry juice, pomegranate juice, lemon juice, and simple syrup.
  • Add ice to fill the glass. Stir well with a bar spoon until chilled.
  • Top with club soda for fizz.
  • Garnish with mint sprig, cranberries, and a lemon wedge.

Notes

Always use fresh lemon juice for best flavor. Adjust simple syrup for sweetness. Easily batch in a pitcher for a party—just top with soda and garnishes before serving.
