  • Jigger or measuring cup
  • Strainer
  • Collins glass or tall tumbler
  • Ice cube tray
  • Tea kettle or pot
  • Fine-mesh strainer

Ingredients

For the hibiscus tea

  • 4 hibiscus tea bags
  • 2 cups hot water
  • 2 tablespoons honey

For each cocktail

  • 2 oz bourbon
  • 1 oz hibiscus tea
  • 3/4 oz fresh lime juice
  • 1/2 oz simple syrup
  • 4-5 fresh mint leaves
  • Ice cubes
  • Club soda
  • Mint sprig and lime wheel for garnish

Instructions

  • Make the hibiscus tea first. Steep tea bags in hot water for 5 minutes.
  • Remove tea bags and stir in honey until dissolved. Let cool to room temperature.
  • In a cocktail shaker, add mint leaves and simple syrup. Muddle gently to release mint oils.
  • Add bourbon, cooled hibiscus tea, and lime juice to the shaker. Fill with ice.
  • Shake for 10-15 seconds until well chilled.
  • Strain into a Collins glass filled with fresh ice.
  • Top with a splash of club soda and stir gently.
  • Garnish with a mint sprig and lime wheel.

Notes

The hibiscus tea can be made ahead and stored in the fridge for up to 5 days.
Double-strain the cocktail if small mint pieces are present.
For a non-alcoholic version, replace bourbon with additional hibiscus tea and club soda.
This recipe makes enough hibiscus tea for 8-10 cocktails.
