  • Large heat-proof pitcher or bowl
  • Saucepan
  • Measuring cups and spoons
  • Mixing spoon
  • Fine-mesh strainer
  • Muddler or wooden spoon
  • Citrus juicer
  • Knife and cutting board
  • Serving glasses
  • Ice cube tray

Ingredients

  • 2 cups boiling water
  • 3 hibiscus tea bags or 2 tbsp dried hibiscus flowers
  • 1/2 cup sugar or more to taste
  • 1 1/2 cups pineapple juice chilled
  • 1/4 cup fresh lime juice or lemon juice
  • 1/2 cup blackberries or raspberries optional
  • 1 –2 inches fresh ginger peeled and sliced
  • 2 cups sparkling water lemon-lime soda, or ginger ale
  • Handful fresh mint leaves plus more for garnish
  • Pineapple slices lime wheels, or edible hibiscus flowers, for garnish
  • Ice cubes for serving

Instructions

  • In a saucepan, bring 2 cups of water to a boil.
  • Remove from heat, add hibiscus tea bags or flowers and sliced ginger, and let steep for 8–10 minutes.
  • Strain out the flowers/tea bags and ginger. Stir in the sugar while still warm and let the tea cool to room temperature.
  • In a large pitcher, muddle the mint leaves with the berries (if using) using a muddler or spoon.
  • Pour in the cooled hibiscus tea, pineapple juice, and lime juice. Stir well.
  • Fill serving glasses with ice and pour in the hibiscus punch mixture.
  • Top each glass with a splash of sparkling water or lemon-lime soda.
  • Garnish with mint leaves, lime wheels, pineapple, or hibiscus flowers.
  • Serve immediately while chilled and fizzy.
