Run a lime wedge around the rim of your glass, then dip it into the cinnamon sugar to coat. Set aside.
Fill a cocktail shaker halfway with ice.
Add tequila, triple sec, apple cider, pomegranate juice, lime juice, and maple syrup (or simple syrup).
Add the pumpkin spice and cayenne pepper if desired.
Shake vigorously for about 15 seconds until well chilled.
Strain into the prepared glass over fresh ice.
Top with 1 to 2 oz of ginger beer or sparkling water.
Garnish with a cinnamon stick, apple slice, blackberry, lime wedge, or blood orange slice.
Serve immediately while cold and bubbly.
