  • Muddler
  • Jigger or measuring cup

Ingredients

For one serving, gather these items:

  • 2 oz fresh grapefruit juice
  • 1 oz simple syrup
  • 4-5 fresh thyme sprigs
  • 4 oz ginger beer
  • Ice cubes
  • Grapefruit wedge and thyme sprig for garnish

You can adjust the sweetness by using more or less simple syrup. For a tart drink, try using just 1/2 oz of syrup.

Instructions

  • Put 3-4 thyme sprigs in the shaker and muddle gently to release the oils.
  • Add grapefruit juice, simple syrup, and ice to the shaker. Shake for 10-15 seconds.
  • Fill a glass with ice and strain the mixture into it.
  • Top with ginger beer and stir gently.
  • Garnish with a grapefruit wedge and thyme sprig.
