Ingredients

  • 3 oz freshly squeezed pink grapefruit juice
  • 1 oz rosemary simple syrup
  • ½ oz fresh lime juice
  • 2 oz sparkling water
  • 1 sprig fresh rosemary plus extra for garnish

  • Grapefruit slice for garnish

For rosemary simple syrup:

  • 1 cup water
  • 1 cup granulated sugar
  • 3 sprigs fresh rosemary

The quality of grapefruit makes a big difference in this recipe. Look for fruits that feel heavy for their size, indicating juiciness.

Instructions

  • Make rosemary simple syrup: Combine water and sugar in a small saucepan. Bring to a simmer over medium heat, stirring until sugar dissolves completely. Add rosemary sprigs, remove from heat, and let steep for 30 minutes. Strain and cool completely.
  • Prepare the glass: Fill a highball glass with ice. For extra flavor, use rosemary-infused ice cubes made by freezing water with tiny rosemary pieces.
  • Mix the mocktail: In a cocktail shaker, gently muddle one rosemary sprig to release its oils. Add grapefruit juice, lime juice, and rosemary simple syrup.
  • Shake and serve: Add ice to the shaker and shake vigorously for about 15 seconds. Strain into the prepared glass and top with sparkling water.
  • Garnish: Add a fresh rosemary sprig and grapefruit slice to the rim of the glass.

Notes

This mocktail can be prepared in advance by mixing the grapefruit juice, lime juice, and rosemary syrup up to 24 hours ahead. Add sparkling water just before serving to maintain carbonation.
For a sweeter version, increase the rosemary syrup to 1½ oz. For a more tart profile, add an extra splash of lime juice.
The rosemary simple syrup keeps well in the refrigerator for up to two weeks in an airtight container. This makes it easy to prepare multiple drinks quickly for gatherings.
For a frozen version, blend all ingredients except sparkling water with ice, then top with sparkling water after pouring into glasses.
