Ingredients

For the Rosemary Simple Syrup:

  • 1 cup water
  • 1 cup granulated sugar
  • 4 fresh rosemary sprigs

For the Mocktail:

  • 3 oz fresh grapefruit juice
  • 1 oz rosemary simple syrup
  • 4 oz tonic water
  • Ice cubes
  • Grapefruit slice and rosemary sprig for garnish

Instructions

  • Make the rosemary simple syrup by combining water and sugar in a saucepan. Heat until sugar dissolves.
  • Add rosemary sprigs to the syrup and simmer for 5 minutes. Remove from heat and let cool for 30 minutes.
  • Strain the syrup and store in an airtight container in the refrigerator.
  • Fill a glass with ice cubes.
  • Pour fresh grapefruit juice and rosemary simple syrup over the ice.
  • Top with tonic water and stir gently to combine.
  • Garnish with a grapefruit slice and fresh rosemary sprig.

Notes

The rosemary simple syrup stays fresh in the refrigerator for up to 2 weeks.
For a stronger rosemary flavor, muddle a small sprig in the glass before adding other ingredients.
Some brands of tonic water are sweeter than others. Adjust the amount of simple syrup based on personal taste.
Make a large batch for parties by multiplying the recipe by the number of servings needed.
