Ingredients

  • 2 oz fresh grapefruit juice
  • 1 oz rosemary simple syrup
  • 4 oz prosecco or sparkling wine
  • Fresh rosemary sprigs for garnish
  • Ice cubes

For rosemary simple syrup:

  • 1 cup water
  • 1 cup granulated sugar
  • 4 fresh rosemary sprigs

Instructions

Make the rosemary simple syrup:

  • Combine water and sugar in a saucepan. Heat until sugar dissolves.
  • Add rosemary sprigs and simmer for 5 minutes. Remove from heat and let cool.
  • Strain and store in the refrigerator.
  • Fill the cocktail shaker with ice. Add grapefruit juice and rosemary simple syrup.
  • Shake vigorously for 10-15 seconds until well chilled.
  • Strain the mixture into a champagne flute.
  • Top with prosecco or sparkling wine. Stir gently with a bar spoon.
  • Garnish with a fresh rosemary sprig.

Notes

Store leftover rosemary simple syrup in an airtight container in the refrigerator for up to 2 weeks.
The cocktail can be made non-alcoholic by replacing prosecco with sparkling water or ginger ale.
Fresh grapefruit juice makes a big difference in taste compared to store-bought juice.
For a stronger rosemary flavor, let the simple syrup steep longer before straining.
