  • Champagne flutes

Ingredients

For each cocktail, you'll need:

  • 2 oz fresh grapefruit juice
  • 1 oz rosemary simple syrup
  • 3 oz chilled champagne or sparkling wine
  • 1 small sprig of fresh rosemary
  • Ice cubes

The rosemary simple syrup can be made by heating equal parts sugar and water with fresh rosemary sprigs. Let it cool and strain before using.

Instructions

  • Put ice in the cocktail shaker.
  • Add grapefruit juice and rosemary simple syrup to the shaker.
  • Shake well for about 10-15 seconds.
  • Strain the mixture into a champagne flute.
  • Top with chilled champagne or sparkling wine.
  • Garnish with a small sprig of fresh rosemary.

    Notes

    This recipe can be easily adjusted to suit different tastes.
    For a stronger rosemary flavor, muddle a small sprig in the shaker before adding other ingredients. To make it less sweet, reduce the amount of simple syrup.
    For a non-alcoholic version, replace the champagne with sparkling water or grapefruit soda.
    The cocktail can be prepared in advance, but add the champagne just before serving to keep it fizzy.
