Ingredients

For one serving:

  • 3 oz 90ml fresh grapefruit juice (about 1 medium grapefruit)
  • 1 oz 30ml fresh lime juice (about 1 lime)
  • 1 oz 30ml honey syrup (equal parts honey and hot water, cooled)
  • 6-8 fresh mint leaves plus extra for garnish
  • 2-3 oz 60-90ml sparkling water
  • Ice cubes
  • Grapefruit slice or wedge for garnish

For a sweeter version, increase the honey syrup to 1.5 oz. Pink grapefruits generally provide a less bitter and more visually appealing juice than white varieties.

Instructions

  • Prepare the honey syrup by mixing equal parts honey and hot water. Stir until dissolved and let cool completely.
  • Juice the citrus fruits. Strain to remove pulp and seeds if desired.
  • Place mint leaves in the bottom of your shaker or jar and gently muddle to release the oils and aroma. Don't over-muddle as this can make the mint taste bitter.
  • Add the grapefruit juice, lime juice, and honey syrup to the shaker with the muddled mint.
  • Fill the shaker with ice and seal tightly. Shake vigorously for 15-20 seconds until well-chilled.
  • Strain the mixture into an ice-filled glass.
  • Top with sparkling water and gently stir to combine.
  • Garnish with a grapefruit slice and fresh mint sprig.

Notes

This mocktail can be prepared in advance (except for adding the sparkling water) and stored in the refrigerator for up to 24 hours. Add the sparkling water just before serving to maintain carbonation.
For a smoother texture, double-strain the mixture through a fine mesh strainer to remove mint fragments and citrus pulp.
