Ingredients

  • 2 oz London dry gin
  • 1 oz fresh grapefruit juice
  • ½ oz fresh lemon juice
  • ½ oz simple syrup
  • Club soda
  • Ice cubes
  • Garnish: Grapefruit wedge and fresh rosemary sprig

Instructions

  • Fill the cocktail shaker with ice.
  • Add gin, grapefruit juice, lemon juice, and simple syrup to the shaker.
  • Shake hard for 10-15 seconds until well-chilled.
  • Fill a Collins glass with fresh ice cubes.
  • Double-strain the mixture into the glass through both strainers.
  • Top with club soda (about 2-3 oz).
  • Gently stir with a bar spoon to combine.
  • Garnish with a grapefruit wedge and rosemary sprig.

Notes

The freshly squeezed grapefruit juice makes a big difference in taste compared to store-bought juice.
Store simple syrup in an airtight container in the refrigerator for up to 2 weeks.
For a less sweet version, reduce the simple syrup to ¼ oz.
This recipe works best with a London dry gin due to its strong juniper notes that complement the citrus.
Double-straining removes small ice chips and pulp for a smoother drink.
