  • Jigger or measuring tool
  • Bar spoon
  • Strainer
  • Citrus juicer
  • Small saucepan
  • Wine glass or tumbler
  • Ice

Ingredients

  • 2 oz fresh grapefruit juice
  • 0.5 oz fresh lime juice
  • 0.5 oz honey syrup 1:1 honey and water
  • 3 oz prosecco chilled
  • 1 oz club soda
  • rosemary sprig for garnish
  • grapefruit wedge for garnish
  • ice cubes

Instructions

  • Fill a cocktail shaker with ice. Add grapefruit juice, lime juice, and honey syrup. Shake for about 10 seconds until cold.
  • Strain into a glass filled with fresh ice.
  • Top with prosecco and club soda.
  • Stir gently with a bar spoon.
  • Garnish with a rosemary sprig and grapefruit wedge. Serve immediately.

Notes

Adjust sweetness by changing the honey syrup. Use chilled prosecco and soda for the best fizz. Clap rosemary sprig before garnishing to release more aroma. Swap in any dry sparkling wine if you don’t have prosecco.
